From humble beginnings, Denver Biscuit Company, DBC, has taken Stapleton by storm. This fun and funky spot features a brick wall painted with fluffy mile-high biscuits falling from the sky. There’s a help-yourself coffee bar and incredibly friendly, efficient staff.

DBC started out as an inconspicuous breakfast joint nestled at the back end of the Atomic Cowboy bar on Colfax Avenue, just west of the Bluebird Theater. Founded by the owner of the bar, Drew Shader, this small breakfast joint has achieved so much success that three more locations have opened and are currently in operation.

So, what is it that makes these biscuits so special?

Back in 2009, Drew decided to provide just what Denver had been lacking – some big buttery biscuits for the chilly Colorado mornings. The idea had originated as a food truck with the breakfast place in the back of the bar being a tentative step into the breakfast biscuit service. Drew’s amazing biscuits quickly had people lining up every weekend just to grab a taste, and it’s hard to blame them for it- take a look at these amazing stuffed biscuits!

With amazing biscuits like these, it’s easy to see what brings people from all over the Denver area to the Stanley Marketplace just to take a bite!


Despite having a relatively small selection of biscuit selections, The Denver Biscuit Company at Stanley Marketplace has been so successful that their usual business times during the weekends have had to expand to the rest of the week. You can now grab yourself some DBC love from 8 in the morning until 2 p.m. Denver Biscuit also serves beer and cocktails, so what better reason to cut out of work a little early and have yourself that biscuit and beer you have been thinking about since you saw that picture?


With choices like buttermilk fried chicken on a biscuit or the traditional biscuits-n-gravy combination, reporter of the Denver Post William Porter hits it on the head when he says, “Breakfast doesn’t get more all-American than this.”

This little guy gives us a great perspective of the ridiculously huge offerings at DBC. And, yes, it’s a super cute pic. You can select any one of the biscuit sandwiches off of the menu and be assured to have a fluffy, buttery hit on your plate.

Try the DCB Club. The waiter will drop off a plate teetering with buttermilk fried chicken, Tender Belly bacon, cheddar cheese, shredded iceberg lettuce, tomato, and chipotle ranch dressing between two tall biscuit halves.
